Summer Salad

Slice vine-ripened Roma tomatoes 1/4" thick
Slice fresh mozzarella (wet) 1/4" thick rounds
Arrange tomato and mozzarella slices around perimiter of a salad plate alternating slices with a 50% overlap of the slices
Fine chop 2-3 leaves fresh basil
Sprinkle over tomato and mozzarella
Drizzle Harpo's Italian Dressing over slices

Italian Shrimp

Devein 1 pound jumbo shrimp-- shell and tail on, head off. Place shrimp in a large plastic freezer baggie. Cover shrimp with Harpo's Italian Dressing
Refrigerate for 1-2 hours
Grill shrimp individually or make shrimp kebobs with Maui onions and bell peppers; then grillServe on a bed of romain lettuce or a bed of rice.

Pasta Salad that Kids (and adults) Love

Cook 1 pound tri-colored Fusilli (spirals), drain and lightly coat noodles with virgin olive oil.
Let noodles cool
Peel then "coin cut" 1/2 cup carrots and add to noodles
Add 1/2 cup pitted black olives
Add 3/4 cup sharp cheddar cheese cut into 1/4" cubes
Add 1/2 cup raw broccoli florettes
Toss all ingredients with 3/4 cup Harpo's Italian Dressing

Pasta Salad

1/2 pound spaghetti
1/2 pound spiral pasta
1 small onion
2 carrots cut in small pieces
1/2 green bell pepper
1/2 cup broccoli
1/2 cup caloflower
1/4 cup celery
8 -10 small cherry tomatoes
8 oz. of sharp cheddar cheese cut in small cubes
1/4 pound pepperoni slices cut in half
5 oz. of Harpos Italian dressing
Cook pasta, add all vegetables except tomatoes add cheese pepperoni and dressing mix with spoon top with cherry tomatoes for looks and serve cold.
